
There’s nothing as cosy as having a clean house, new sheets on the beds and a chicken roasting in the oven on a Sunday night. A roast is a lovely way to end/start the week, but if you really get into all the trimings as I usually do it becomes a bit of a stodgefest and it feels like you have to peel veg for hours.
I like to get a chicken, a nice bit of ‘pide’ bread from the Turkish bakery and go next door to the Turkish grocer’s grab all sorts of fresh delights to go with it. I just chucked the chicken in with some lemons & thyme, smeared some spicy walnut paste from the shop and flipped it on its back to let the juices run into the breast. Next I made a simple cucumber, tomato and parsley salad. Finely chopped parsley is hella underrated, it makes you feel so full of vitality cause it’s (science bit) megagreen. I also bought some slim long peppers, like the kind you get pickled and served in kebabs. My grandad likes to make these into a salad when he comes over, and him and my grandma are pretty much spot-on about everything (case in point: they don’t see the point of Dali) so I do the same.
Then you just chop some feta, open the hoummous and dolmades, and tear up some of the pide bread to soak up the vinaigrette. I added some walnuts because walnuts and feta is the new best thing, and we washed it down with a bit of prosecco. Yum yum! It’s nice and simple for a relaxing Sunday, and so fresh. Srsly, try it.
