
Having a between brunch and dinner hunger pang, heightened by the dull pain of a gin hangover, I decided to make some dang quesadillas, much more excited than your common cheese toastie. Hands up who can think of a quesadilla without saying ‘make yourself a dang quesadilla!’ from Napoleon Dynamite. I know it’s lame but I can’t help it. As ever, excuse Shitcam©, should be getting a new one soon, whoop whoop!
Rooting around in the fridge I found some spring onions and jalapeno peppers, which I mixed into a bowl with grated cheese and some chopped parsley from the freezer (whenever I buy a fat bunch of market herbs I chop it all up and chuck whatever’s leftover in a jar in the freezer, DO IT!) It’s also good to keep a packet of tortillas in the freezer, for carb emergencies. All you then need to do is put your tortilla in a non-stick pan and heat. I prefer to use one tortilla and fold, because it’s easier to flip than a half moon.
I also had some cream in the fridge so I squeezed some oo-old limes and left to work magic. My flatmate donated a generous dollop of leftover chilli which was lucky, but you could make a salsa or salad or whatever you can find. Then just cut the quesadillas into wedges and dip into all the sloppy sides you made. If it was summer I would have probably had a beer too. Mm-hmm.
